Customer Review: A sharp knife is the most important kitchen tool

Although I have many knifes, I regard this set, and specifically the knife, as the best in my kitchen. The knife holds an edge longer than any other, and the handle shape is very comfortable. The weight is solid, the blade stiff -- this is a serious tool. I also have a set of Laguiole steak knives, a corkscrew, and a folding knife (contrary to the description here, they do still make a wide range of Laguiole knives in the town of Laguiole).
Description of Sabatier Laguiole 2-Piece Carving Set in Wood Tray, Black
This carving set was inspired by the celebrated Laguiole knife, a folding pocket knife which originated in 1829 in a French mountain village of the same name. Today, Laguiole knives are made in Thiers, the French cutlery center, according to the original design--except they don't fold. With blade and head made of high-carbon stainless steel, the 6-1/2-inch knife and 5-1/2-inch fork in this set have black handles in the original design: elongated, pistol-grip style secured by three rivets and decorated with a tiny stainless-steel bee, homage to a bee on Napoleon I's Imperial emblem, which was awarded for bravery. The knife and fork come in a wood tray for safe storage on the counter or in a drawer. The tray measures 12 inches long and 3 inches wide. --Fred BrackCarving Sets
